From Our Kitchen to Yours
Spring might be on the horizon, but it's definitely still soup weather here. There's nothing Jamestown loves quite as much as a big bowl of hot knephla soup. Make some yourself, and imagine yourself here with us.
Knephla Soup
2 quarts water
1 1/2 cups potatoes, diced
3 teaspoons salt
Pepper
Accent*
Small amount of parsley
2 stalks celery, diced
2 cups flour
1 egg
1 teaspoon salt
Water (enough to make a medium-stiff dough)
4 slices bacon
1 can cream of chicken soup
Boil 2 quarts of water with potatoes, salt, pepper, accent, parsley, celery and 1/4 onion for about 10 minutes. Meantime, make dough, using the flour, egg, salt and water. Cut dough into potato mixture. At this point, I add the chicken soup. Fry the bacon and break into small pieces. Use the bacon grease and brown the rest of the onion. Add all to simmering mixture. Last of all, add milk or half and half, about 2-3 cups or more, depending on how thick you want the soup.
